eggless cake recipe

Ingredients:

1 1/2 cups (210g) ragi flour

Pinch of salt

1 tsp baking powder

1/2 tsp baking soda

1 cup (200g) jaggery powder

1/4 cup (60ml) milk

1 cup (240g) curd (yogurt)

1/4 cup (60ml) vegetable oil

1 tsp vanilla extract

Instructions:

Preheat your oven to 170°C (340°F). Grease and flour a 7" or 5" pan and set it aside.

In a mixing bowl, whisk together the ragi flour, salt, baking powder, and baking soda until well combined. Set aside.

In another mixing bowl, combine the jaggery powder, milk, curd, vegetable oil, and vanilla extract. Mix until the jaggery is fully dissolved and the ingredients are well combined.

Gradually add the dry ingredients to the wet ingredients, stirring until a smooth batter forms. Be careful not to overmix.

Pour the batter into the prepared pan, spreading it evenly.

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.
