Ingredients:
2 cups old-fashioned rolled oats
¼ cup whole wheat flour
¼ cup unsweetened cocoa powder
1 teaspoon baking powder
½ cup jaggery
½ cup peanutbutter
½ cup dark chocolate chips (optional)
½ cup chopped nuts (such as walnuts or almonds), toasted
Instructions:
Preheat the oven to 180°C and lightly grease a square baking pan.
In a large mixing bowl, combine the ground oats, whole wheat flour, cocoa powder, baking powder, and salt. Mix well to ensure even distribution of dry ingredients.
In a separate bowl, whisk together the peanut butter and jaggery (or maple syrup) until well combined.
Gradually pour the wet ingredients into the dry ingredients, stirring gently until a smooth batter forms. If desired, fold in the dark chocolate chips at this stage.
Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
Sprinkle the toasted chopped nuts on top, gently pressing them into the batter.
Place the pan in the preheated oven and bake for approximately 40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Be cautious not to overbake, as this can lead to dry brownies.
Once baked, remove the pan from the oven and allow the brownies to cool in the pan for about 10 minutes.
Carefully transfer the brownies to a wire rack to cool completely before cutting into squares.
