Wholesome Delight: Jaggery Ragi Cake Recipe

Ingredients:
1 cup ragi flour
1 cup whole wheat flour
1 cup grated jaggery
1/2 cup melted unsalted butter or ghee
1 cup yogurt
1 teaspoon baking powder
1/2 teaspoon baking soda
A pinch of salt
1/2 cup chopped nuts (almonds, walnuts, or any of your choice)
1 teaspoon vanilla extract
Instructions:
Preheat your oven to 180°C (350°F) and grease a cake pan.
In a mixing bowl, combine ragi flour, whole wheat flour, baking powder, baking soda, cinnamon powder, and a pinch of salt. Mix well to ensure even distribution of dry ingredients.
In a separate bowl, whisk together melted butter or ghee, grated jaggery, and yogurt until the jaggery is completely dissolved.
Gradually add the wet ingredients to the dry ingredients, stirring continuously to form a smooth batter.
Add vanilla extract and mix well. If the batter is too thick, you can add a tablespoon of milk to achieve the desired consistency.
Gently fold in the chopped nuts, ensuring an even distribution throughout the batter.
Pour the batter into the greased cake pan and smooth the top with a spatula.
Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
