Ingredients:

1 medium-sized cauliflower, washed and cut into florets
1 cup fresh coriander leaves (cilantro), washed and finely chopped

3-4 cloves of garlic
1-inch piece of ginger
2 green chilies
1 tablespoon vegetable oil
Salt to taste
Instructions:

Blanch the Cauliflower:

Bring a pot of water to a boil and add a pinch of salt.
Add the cauliflower florets and blanch them for about 2-3 minutes until they become slightly tender but still retain their crispness.
Drain the cauliflower and rinse it under cold water to stop further cooking. Set aside.
Prepare the Coriander Paste:

In a blender or food processor, add the chopped coriander leaves, minced garlic, grated ginger, and green chilies.
Blend until you get a smooth paste. You can add a splash of water if needed to facilitate blending.

Add the freshly prepared coriander paste to the cauliflower and mix it well with the flours and coat well.

Fry them in oil till it turns crispy. Serve it hot with some ketchup.
