Delicious and Nutritious: A Guide to Making Millet Dosas
In the quest for healthier eating habits, many of us are turning to ancient grains for their nutritional benefits and unique flavors. Millets, a group of small-seeded grasses, have been a staple in various cultures for centuries due to their high nutrient content and adaptability. One delightful way to incorporate millets into your diet is by preparing crispy and flavorful Millet Dosas. In this article, we'll take you through a step-by-step guide to creating these wholesome dosas in your own kitchen.
Why Choose Millets?
Millet grains have gained popularity for their exceptional nutritional profile. They are rich in dietary fiber, vitamins, and minerals, making them an excellent choice for those seeking a balanced and nutrient-packed diet. Millets are gluten-free and have a low glycemic index, making them suitable for individuals with dietary restrictions and those looking to manage blood sugar levels.
The Ingredients You'll Need:
1 cup Foxtail millet
1/2 cup urad dal (black gram) flour
1/2 teaspoon fenugreek seeds
1/4 cup Poha - flattened rice
Salt to taste
Water, as needed
Oil or ghee for cooking
Step-by-Step Preparation:
Step 1: Preparing the Batter
In a mixing bowl, add the foxtail millet, urad dal flour, and fenugreek seeds. Add water and soak for 6 hours . After 6 hours grind it to a smooth batter. Add salt to taste. Allow the batter to ferment for about 6-8 hours or overnight. Fermentation not only enhances the flavor but also promotes easier digestion and nutrient absorption.
Step 2: Making the Dosas
Heat a non-stick skillet or dosa pan over medium heat.
Once the pan is hot, drizzle a few drops of oil and spread it using a paper towel to coat the pan.
Pour a ladleful of batter onto the center of the pan.
Using the back of the ladle, gently spread the batter in a circular motion to create a thin dosa.
Drizzle a few drops of oil or ghee around the edges of the dosa to promote crispiness.
Cook the dosa until the edges turn golden brown and crispy, and the center is cooked.
