Ingredients:
2 medium-sized fresh beetroots, peeled and diced
300g pasta of your choice (penne, fusilli, or spaghetti work well)
2 garlic cloves
1 small onion
1 cup heavy cream (substitute with coconut cream for a vegan option)
1/2 cup grated Parmesan cheese (substitute with nutritional yeast for a vegan option)
Salt and pepper to taste
Optional toppings: toasted pine nuts, crumbled goat cheese, or microgreens.
Instructions:
Preparing the Beetroot Sauce:
Add beetroot, onion, and garlic in boiling water and cook for about 5 minutes or until the beets soften slightly and release their vibrant color.
Take out the beetroot, onion and garlic from water and add the pasta and cook until it reaches al dente perfection.
Drain the pasta and set aside.
Blending the Beetroot Sauce:
Transfer the beetroot mixture to a blender or use an immersion blender directly in the skillet. Blend until you achieve a smooth and creamy consistency.
Return the blended beetroot sauce to the skillet and add the heavy cream (or coconut cream for a vegan option) and vegetable broth. Stir well and let it simmer for a couple of minutes, allowing the flavors to meld together.
Finishing Touches:
