eggless chocolate mousse cake:
Ingredients:
For the cake:
2/3cups all-purpose flour(85gm)
2 tsp cocoa powder
1/2cup granulated sugar(100gm)
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
2 tbsp vegetable oil
1/2 teaspoon vinegar
1/3 cup warm water(79ml)
1 teaspoon vanilla extract

For the chocolate mousse:
1 1/2 cups whipping cream, chilled(354ml)
1 cups semisweet dark chocolate(140gm)
2 tablespoons powdered sugar
1 teaspoon vanilla extract

For the ganache (optional):
1/2 cup whipping cream(118ml)
1 cup semisweet dark chocolate (140gm)
Instructions:
Preheat your oven to 350°F (175°C) and grease a 8-inch round cake pan.
In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add the vegetable oil, warm water, vinegar, and vanilla extract to the dry ingredients. Mix well until the batter is smooth.
Pour the batter into the greased cake pan and smooth the top. Bake in the preheated oven for about 20 minutes or until a toothpick inserted into the center comes out clean.
Once the cake is baked, remove it from the oven and let it cool completely in the pan.
While the cake is cooling, prepare the chocolate mousse. In a microwave-safe bowl, heat the dark chocolate in 30-second intervals, stirring in between, until melted and smooth. Let the melted chocolate cool slightly.
In a separate mixing bowl, whip the chilled heavy cream until soft peaks form. Add the powdered sugar and vanilla extract and continue to whip until stiff peaks form.
Gently fold the melted chocolate into the whipped cream until well combine.
Refrigerate for 3-4 hour or until set.
Once the cake has cooled, carefully remove it from the pan and place it on a serving plate. .
Prepare the ganache by heating the heavy cream in a saucepan until it starts to simmer. Remove from heat and add the chopped dark chocolate . Let it sit for a minute, then stir until smooth. Let the ganache cool slightly.
Pour the ganache over the top of the cake.
refrigerator the cake until set.
Once the ganache has set, remove the cake from the refrigerator and serve. You can garnish it with chocolate shavings or fresh berries.
