Make Chicken Fried Rice in 20 minutes.This fried rice tastes better than your regular takeaway. You will be surprised how easy it is to make restaurant style chicken fried rice right in your kitchen.

Ingredients:
Onion - chopped 1/4 cup
Carrots - Julienne 1/2 cup
Peas - 1/4 cup
Cooked Chicken - 1/2 cup
Eggs - 2
Black Pepper
Chilli - Optional
Soy Sauce - 2 tsp
Oyster Sauce - 1/2 tsp
Sesame Oil - 1/2 tsp
Fresh/Leftover Rice - 1 cup
Oil
Salt as per taste

Method:
1. Heat 1 tsp oil and add beaten eggs. After adding salt as per your taste, break and fold the eggs until they are scrambled. Once done, keep the scrambled eggs in a separate bowl.
2. Heat 1 tsp oil. Add chopped onion and saute them til they are little transparent and little brown.
3. Add carrots, peas and chicken pieces and saute them.
4. Add 1 tsp soy sauce, 1 tsp oyster sauce and 1 tsp sesame oil. Mix well.
5. Add cooked rice. Break big pieces of rice and mix very well with the rest of the ingredients.
6. Add 1 tsp soy sauce and 1/2 tsp of black pepper to the rice.
7. Mix well. If the pan is too dry, add 1-2 tbs of water.
8. Add the scrambled eggs at the end and mix well with the rice.
9. Check the seasoning. The soy sauce contains salt but if needed add some salt as per your taste.
10. Serve hot and enjoy the rice on its own or along with a Chinese curry of your choice.
