Cauliflower Fried Rice In 2 Ways - Veg & Non Veg

This is the recipe to make cauliflower fried rice in both veg and non veg version. With everyone nowadays moving to eat healthy, this recipe is perfect substitute for your regular fried rice.

Cauliflower Fried Rice Recipe :

cauliflower rice - 300 grams
chopped red pepper - 1/2 cup
chopped yellow pepper - 1/2 cup
chopped green pepper - 1/2 cup
chopped onion - 1/2 cup
chopped carrots - 1/2 cup
frozen/fresh peas - 1/2 cup
black pepper - 1 tsp
salt as per taste

Optional
Eggs - 2
chopped Smoked sausage - 1/2 cup

To make the vegetarian version of the fried rice:
1. In a pan, add some oil to heat. Once hot, add the onion and saute them.
2. Add chopped carrots and cover them for few minutes. This help the carrots to soften a little.
3. Add the chopped peppers and cover them for a while.
4. Next add the cauliflower rice and add black pepper and salt to taste.
5. Mix everything well and cover . The cauliflower will release moisture.
6. Check few times in between and stir occasionally.
7. By now the cauliflower rice will have released all its moisture and will become soft.
8. At this point, add the peas. Your veg cauliflower rice is ready!

To make the non veg version of the rice:
9. Add little oil in the pan.
10. Once hot, add beaten eggs.
11. Add chopped smoked sausages and mix well. Your non veg cauliflower rice is ready!
