السمك دائماً لذيذ عند طهيه بهذه الطريقة اليمنية السهلة!
Fish is always delicious when cooked in this easy Yemeni method!


المكونات:

(20 جرام) فلفل مجفف ليس حار مجفف
600 جرام شرائح لحم كنعد (ديرك)
ملح
فلفل اسود
زيت الطهي
(200 جرام) بصل مفروم
(15 جرام) ثوم
(20 جرام) معجون طماطم
ملعقة صغيرة كمون
ملعقة صغيرة كزبرة
ملعقة صغيرة بابريكا
نصف ملعقة صغيرة كركم
فلفل حار (اختياري)
كزبرة للتزيين
أرز أو خبز للتقديم

التعليمات:

ننقع الفلفل المجفف في الماء الساخن لمدة ساعة، ثم نمزجه حتى يصبح ناعمًا مع القليل من ماء النقع.

تُتبل شرائح السمك بالملح والفلفل الأسود وبعض صلصة فلفل جواجيلو.

اخلطي الكمون، والكزبرة، والبابريكا، والكركم في وعاء صغير. يُتبل السمك بنصف كمية خليط البهارات.

يُقلى السمك في الزيت الساخن على الجهتين، ثم يُرفع من المقلاة.

يُقلى البصل المفروم في نفس المقلاة، ثم يُضاف الثوم ومعجون الطماطم وباقي صلصة الفلفل والملح والفلفل الأسود ومزيج البهارات المتبقي. أضف الفلفل الحار إذا رغبت في ذلك.

يُسكب كوبين من الماء ويُطهى على نار متوسطة لمدة 5 دقائق.

يُضاف السمك مرة أخرى إلى المقلاة ويُطهى على نار خفيفة لمدة 15 دقيقة.

تزين بالكزبرة وتقدم مع الأرز أو الخبز.

Ingredients:

(20 grams) dried guajillo chili peppers (not hot)
600 grams kingfish steaks
Salt
Black pepper
Cooking oil
(200 grams) chopped onion
(15 grams) garlic
(20 grams) tomato paste
One tsp cumin
One tsp coriander
One tsp paprika
Half a tsp turmeric
Hot pepper (optional)
Coriander for garnish
Rice or bread for serving

Instructions:

Soak dried guajillo chili peppers in hot water for one hour, then blend into a smooth consistency with a bit of the soaking water.

Season fish steaks with salt, black pepper, and some of the guajillo pepper sauce.
Mix cumin, coriander, paprika, and turmeric in a small bowl. Season fish with half of the spice mix.

Fry fish in hot cooking oil on both sides, then remove from the pan.
Saute chopped onion in the same pan, then stir in garlic, tomato paste, the rest of the pepper sauce, salt, black pepper, and the remaining spice mix. Add hot pepper if desired.

Pour in two cups of water and cook over medium heat for 5 minutes.

Add the fish back into the pan and cook over low heat for 15 minutes.

Garnish with coriander and serve with rice or bread.
