Vegetables are always delicious in this Yemeni way with okra



 المكونات:

 ملعقة كبيرة زيت نباتي
 (250 جرام) بصل مفروم
 ملعقة كبيرة ثوم (15 جرام)
 فلفل أسود، حسب الرغبة
 (170 جرام) فلفل رومي مقطع مكعبات
 (3 ملاعق كبيرة) معجون طماطم (45 جرام)
 (350 جرام) طماطم مقطعة مكعبات
 ملح للتذوق
 (130 جرام) جزر، مقطع إلى شرائح
 (300 جرام) كوسة مقطعة مكعبات
 (400 جرام) باذنجان مقطع مكعبات
 (250 جرام) بامية، مقطعة الأطراف
 (500 جرام) بطاطس مقطعة مكعبات
 ملعقة كبيرة كمون
 ملعقة كبيرة كزبرة
 ملعقة كبيرة بابريكا
 ملعقة صغيرة كركم
 ملعقة صغيرة فلفل أسود
 ثلاثة أكواب ماء
 كزبرة طازجة للتزيين
 خبز أو أرز للتقديم


 التعليمات:


 سخني الزيت النباتي في قدر على نار متوسطة.

 يُضاف البصل المفروم ويُقلى حتى يصبح شفافاً.

 يُضاف الثوم، والفلفل الأسود، والفلفل الحلو المقطع، ومعجون الطماطم.

 أضيفي الطماطم المقطعة والملح، ثم اخلطي المكونات جيداً.

 يُضاف قطع الجزر والكوسا والباذنجان والبامية والبطاطس إلى الوعاء.

 نرش الكمون، والكزبرة، والبابريكا، والكركم، والفلفل الأسود فوق الخضار.

 نصب الماء، مع التأكد من غمر جميع الخضروات.

 يُغطّى القدر ويُترك على نار خفيفة على نار متوسطة لمدة 40 دقيقة أو حتى تنضج الخضار مع التحريك من حين لآخر.

 بعد أن تنضج، تزين بالكزبرة الطازجة.

 تقدم ساخنة مع الخبز أو الأرز.

Ingredients:

One tbsp vegetable oil
(250g) chopped onion
One tbsp garlic (15g)
Black pepper, to taste
(170g) diced bell peppers
(3 tbsp) tomato paste (45g)
(350g) diced tomatoes
Salt, to taste
(130g) carrots, sliced
(300g) zucchini, cubed
(400g) eggplant, cubed
(250g) okra, ends cut
(500g) potatoes, cubed
One tbsp cumin
One tbsp coriander
One tbsp paprika
One tsp turmeric
One tsp black pepper
Three cups water
Fresh coriander for garnish
Bread or rice for serving

Instructions:

Heat vegetable oil in a pot over medium heat.
Add chopped onion and sauté until translucent.
Stir in garlic, black pepper, diced bell peppers, and tomato paste.
Add diced tomatoes and salt, then mix well.
Incorporate sliced carrots, cubed zucchini, eggplant, okra, and potatoes into the pot.
Sprinkle cumin, coriander, paprika, turmeric, and black pepper over the vegetables.
Pour in water, ensuring all vegetables are submerged.
Cover and simmer over medium heat for about 40 minutes or until vegetables are tender, stirring occasionally.
Once cooked, garnish with fresh coriander.
Serve hot with bread or rice.
