茄子含有维生素E,有抗衰老的功效,还有清热解毒等许多好处。茄子皮里面含有B族维生素,B族维生素和维生素C是一对很好的搭档,我们摄入充足的维生素C后,维生素C的代谢过程中是需要B族维生素支持的。带皮吃茄子有助于促进维生素C的吸收。茄子切忌生吃,以免中毒。有研究发现茄子皮抗癌活性最强,其效力甚至超过了抗癌药物干扰素。

Ingredients:
3根长茄子 - 3 Eggplant
3个西红柿 - 3 tomatoes
3个 螺丝辣椒 - 3 Green Spicy Screw Pepper
1个大蒜瓣 -1 Garlic Cloves -
1小块生姜 - A small piece Ginger -
1根小葱 - 1 Green Onion

1小勺盐 - 1 tsp salt
1 大勺白醋 - 1 tbsp white Vinegar
3 大勺玉米淀粉 - 3 tbsp corn starch
Sauce:
1 大勺料酒 - 1tbsp cooking wine
2 大勺生抽酱油 - 2tbsp light soy sauce
1 大勺镇江香醋 - 1 tbsp Zhenjiang Vinegar
2 大勺糖 - 2 tbsp sugar
1 小勺玉米淀粉 -1 tsp corn starch
1/8 小勺蘑菇精 - 1/8 tsp Granulated Mushroom Bouillon
3 大勺水 - 3 tbsp water
