今天和大家分享一道特别好吃的冬笋鲜肉糯米烧麦的做法。在亚州超市看到了新鲜的冬笋，买了一袋榨菜，就想着做妈妈常做的烧麦了。有朋友说烧麦应该是全肉馅的。可是我吃过的烧麦是这样的。

网上查了一下，原来烧麦也有南北之说。“北方烧麦可以说是正统烧麦，最早的烧麦应该是羊肉大葱馅的，就是西贝面村里卖的烧麦。南方的烧麦要到淮河以南才比较多，但基本上是糯米烧麦了，还加一些猪肉末。”

不管怎样，我就介绍一下我家的吃法：

Ingredients:

Filling 馅料:
2 杯糯米 -- 2 cups Sweet rice
150 克五花肉 -- 150 g pork belly
1个冬笋 -- a winter bamboo shoots (去皮净重150g)
1 袋榨菜 -- a bag of pickled mustard
1 个胡萝卜 -- a Carrot
10个干香菇 -- 10 mushroom
1/2杯冷冻的豌豆 - 1/2 cup frozen peas
1 根葱 -- a scallion
a few slices of ginger - 几片生姜片



Seasoning 调料：
1大勺 料酒-- 1 tbsp cooking wine
1大勺 红烧酱油 -- 1 tbsp soy sauce for braised dishes
(alternatives: Light soy sauce 1 tbsp + dark soy sauce 1 tsp)
1大勺 鲜味蚝油 -- 1tbsp Oyster flavored sauce

Dough :( making 16 shumai)

1 杯中筋面粉 -- 1 cup all-purpose flour
1/4 杯玉米淀粉 -- 1/4 cup corn-starch
1/2 杯水 -- 1/2 cup water
