今天和大家分享一道川味的宫保茄子虾球。茄子一定要做到外酥里嫩,再用宫保酱汁来烧制,加上虾的鲜嫩,真是比肉还好吃。

Ingredients:
500g Eggplants - 茄子 500克
340g large shrimps - 大虾 340克
6 dry red chili pepper - 干红辣椒 6个
1tsp Sichuan peppercorn - 花椒 1小勺
1 small piece of Ginger - 生姜 一小块
a few garlics - 大蒜瓣 几个
4 green onions - 葱白 4根

Kung Pao Sauce
1 tbsp vinegar - 香醋 1大勺
1 tbsp light soy sauce - 生抽 1大勺
1 tbsp sugar - 白糖 1大勺
1 tbsp oyster sauce - 蚝油 1大勺
1 tsp dark soy sauce - 老抽 1小勺
1 tsp starch - 淀粉 1小勺
1/3 cup water - 清水 1/3杯
