前两天跟友人聊起了油面筋塞肉,聊着聊着,就馋了。赶快做起来。
说到油面筋,很多人从小吃到大都吃不腻,有着色泽金黄,表面光滑,久煮不烂的特点。面筋塞肉,润滑筋道的独特口感,被浓汁包裹着的肉丸子,更是让人情有独钟,回味无穷。寓意着团团圆圆的面筋塞肉也是江南过年家宴上少不了的一道菜。

今天做的油面筋塞肉中用的油面筋是自己做的,做法在下一个视频中介绍。

肉馅的调制中,加入了荸荠,这样肉馅松软,不紧实,吃着比较清爽。

Ingredient: (10个油面筋)
肉馅的调制:
300g ground pork - 猪肉末 300克
12 water chestnut - 荸荠12个
1egg - 鸡蛋1个
1tbsp cooking wine - 料酒 1大勺
1 tbsp light soy sauce - 生抽酱油 1 大勺
1/8 tsp white pepper - 白胡椒粉 1/8 小勺
2 tsp dark soy sauce - 老抽酱油 2 小勺
1 tbsp sesame oil - 香油 1 大勺
1/4 tsp sugar - 糖 1/4 小勺

调料:
1tbsp cooking wine - 料酒 1大勺
1 tbsp light soy sauce - 生抽酱油 1 大勺
4 piece of ginger - 生姜 4片
2 scallion - 青葱 2 根
2 Aniseed -大料 2个
