Fish Cutlets Recipe | Crispy Srilankan Cutlets | Iftar Special
Sri Lankan Fish Cutlets are savory snacks made from a mixture of flaked fish, mashed potatoes, and a blend of aromatic spices. These flavorful cutlets are enjoyed hot and are often served with tangy sauces or chutneys for dipping. They make for a delicious and satisfying snack or party food with a delightful blend of spices and textures.
INGREDIENTS
(FILLING)
Potatoes - 3 Large (approx. 350g) Boiled to fork tender.
Oil - 2 Tbsp
Cinnamon Stick - Small piece
Cardamom
Cloves - 2
Ginger & Garlic Paste - 1 Tbsp
Pandan & Curry Leaves - 1 Tbsp
Green Chillies - 2 Chopped
Birds Eye Chillies - 5
Onion - 1 Medium size Chopped
Canned Fish - 200g
Turmeric - 1/4 Tsp
Chilli flakes - 1 Tsp
Pepper Powder - 1 1/2 Tsp
Knorr Maldives Fish Powder - Optional
Salt - As per Taste
(BATTER)
Flour - 4 Tbsp
Salt - A Pinch
Water - Enough to make a thin Batter (approx. 100ml)
Breadcrumbs
Oil - To Fry
IMPORTANT TIPS TO PREVENT CRACKING
01. Every ingredient in the filling should be finely chopped so that nothing sticks out of the cutlet balls.
02. Excess moisture in the filling causes crackly cutlets to prevent it
Do not overcook the potatoes until they are mushy, Drain the canned fish very well before adding, Cook over high heat until excess moisture is removed.
03. The Breadcrumbs that you use should not be very powdery.
04. Refrigerate the Coated cutlets before frying to make them dry and firm.
05. Deep fry the cutlets and make sure not to overcrowd pan.
