A traditional dish made from a fermented rice flour batter. The batter is poured into the pan and swirled around to coat the edges, creating a thin, crispy layer on the bottom and a soft, spongy center. They are often served as a breakfast or dinner dish in Sri Lanka and are beloved for their versatility and delicious flavor.

INGREDIENTS
A Slice Of Bread - Corner Piece
Coconut Water - 150ml

String Hopper Rice Flour - 2 1/2 Cups (store bought instant Rice Flour)
All Purpose Flour - 1/2 Cup
Sugar - 2 Tbsp
Instant Yeast - 1/2 Tsp
Luke Warm Water - 200 To 250 ml (According to consistency)
Salt - 1 Tsp
Thick Coconut Milk - Approximately about 300ml

(LUNU MIRIS)
Shallots - 1/2 Cup
Chili Flakes - 3 Tbsp
Maldives Fish - 1 1/2 Tbsp
Salt - As Per Taste
Lime Juice - 1/2 Lime

(To Season The Hopper Pan)
Gingelly Oil - 2 Tbsp
1 Egg

IMPORTANT POINTS
01. If the pan is too Hot when swirling the batter it will not stick properly.
02. You can add lukewarm Water to the batter to adjust the consistency if your batter is thick.
03. To Make the Edges More Crispier add a little Sugar to your batter.
04. Grease The Pan With The Prepared Compress Ball Between Each Hopper.
05. If The Consistency of the batter is right when you swirl the pan a Thin lacy layer of batter should stick to the sides.
06. When Buying String Hopper Rice Flour Do not Buy Glutinous Rice Flour.
