IDLI & Sambar Recipe | Soft And Spongy Khushboo Idli | Perfect Idli Batter
A classic South Indian dish that consists of steamed rice cakes (Idli) served with a flavorful stew (sambar).

Idli is made from a batter of fermented rice and Urad dal, which is steamed to create soft, fluffy cakes. These cakes are typically round in shape and have a slightly tangy flavor due to the fermentation process.

The combination of Idli and sambar creates a harmonious balance of textures and flavors – the softness of the Idli complements the heartiness of the sambar, while the spices in the stew enhance the subtle taste of the rice cakes. It's a wholesome and satisfying meal enjoyed for breakfast, brunch, or even as a light dinner.


INGREDIENTS

Idli Rice - 2 Cups (400g) " I have used Araliya Nadu Rice "
Urad dal - 1/2 Cup (100g)
Sago - 1/8 Cup (25g)
Salt - 1 To 2 Tsp (Add More Salt If You are getting a Tangy Taste)

(SAMBAR)
Dal - 1/2 Cup (Soaked)
Onion - 1/2 (Sliced)
Green Chilies - 2
Shallots - 1/4 Cup
Curry Leaves - 1 Spring
Fenugreek Seeds - 1 Tsp
Turmeric Powder - 1/2 Tsp
Salt - 1 Tsp
Water - 2 Cups
Vegetables - Carrot, Beans, Potato, Egg Plant
Tomato - 1 Medium Size
Tamarind - 1 Tsp Tamarind Dissolved in 1 Cup Water
Chili Powder - 1 Tbsp
Coriander Powder - 1 1/2 Tbsp
Cumin Powder - 1/2 Tsp
Jaggery - 1 Tsp
Water & Salt - According to your preference
(FOR TEMPERING)
Oil - 3 Tbsp
Mustard Seeds - 1 Tsp
Curry Leaves
Dried Chilies - 2 To 3
Garlic - Few Grated
