INGREDIENTS
For spinach:
Olive oil
1 onion
520g of spinach
Salt
Pepper

For cake mixture:
3 eggs
130ml (1/2 cup) of milk
160g (1 1/4 cups) of flour
Salt
Pepper
Parsley
220g of feta

Olive oil
Cheese

METHOD
1. In a pan add the olive oil and onion and fry until translucent. Add the spinach salt and pepper and fry for a few minutes. Remove from the heat.
2. In a bowl add the eggs, milk, flour, salt, pepper, parsley, feta, and prepared spinach and mix to combine.
3. Add the olive oil to the baking dish and pour the prepared mixture. Arrange cheese and sprinkle with parsley.
4. Bake the cake in the oven at 180°C/360°F for 25 minutes. Cut on squares after baking and serve.
