Chocolate Bubbles Cupcake: Ideal For A Quick And Tasty Snack!

INGREDIENTS
For the muffins:
170 g (1 1/2 cup) of all-purpose flour
160 g ( 4/5 cup) of sugar
30 g ( 3 ¼ tbsp ) of cocoa powder
8 g of baking powder
a pinch of salt
2 eggs
80 ml (⅓ cup) of vegetable oil
5ml (1 tsp) of vanilla extract
1 9 0ml (¾ cup) of water
Chocolate-covered cereal balls
For the filling:
160 g (½ cup) of apricot jam
For the ganache:
160 g (1 cup) of dark chocolate, chopped
120ml (½ cup) of full-fat cream
METHOD
1. Preheat the oven to 180°C/350°F. Line the muffin tray with paper muffin cups.
2. Whisk flour with sugar, cocoa, baking powder and salt.
3. Add eggs, vegetable oil, water, and vanilla. Whisk until smooth batter comes together.
4. Pour batter into muffin cups, filling each ⅔ way up. Bake for 18-20 minutes, let cool down, and remove the middle with an apple corer.
5. Fill each muffin with apricot jam.
6. Melt chocolate and cream, let cool down until thick, then pipe on top of each muffin. Cover with chocolate-covered cereal balls.
