HEALTHY DINNER ROLLS RECIPE
Ingredients:
1 cup old-fashioned rolled oats (90g)
3/4 cup buttermilk (180ml), for soaking the oats
1/4 cup unsweetened applesauce (65g)
3 cup spelt flour, or whole wheat flour (360g)
1 tsp salt
1 packet instant yeast (7g)
1/2 cup buttermilk (120ml)
1 tsp agave or maple syrup
1 egg
sunflower seeds (for topping)
Instructions:
In a mixing bowl, combine the rolled oats, 3/4 cup of buttermilk, and unsweetened applesauce. Stir to combine and allow the mixture to sit for 15 minutes, allowing the oats to absorb the liquid.
In a large mixing bowl, combine the spelt flour (or whole wheat flour), salt, and instant yeast.
In a separate small bowl, whisk together the remaining 1/2 cup of buttermilk, agave (or maple syrup), and egg.
Pour the wet ingredients into the bowl with the dry ingredients, along with the soaked oats mixture. Stir with a wooden spoon until the ingredients are evenly incorporated.
Transfer the dough onto a lightly floured surface and knead by hand for about 10 minutes, until the dough is smooth and slightly tacky. Avoid adding too much flour during this process. Alternatively, you can use a stand mixer with a dough hook attachment.
Grease a large bowl with butter or cooking spray, then place the dough into the bowl. Cover the bowl with a clean kitchen towel or plastic wrap and allow the dough to rise for 1 hour, or until it has doubled in size.
Once the dough has risen, punch it down and transfer it to a clean surface. Divide the dough into 12 equal pieces, roughly 75g each. Shape each piece into a small ball.
Grease a 10-inch springform pan or a 13x9-inch baking pan. Place the dough balls into the pan, leaving some space between each roll.
Cover the pan with a clean kitchen towel or plastic wrap and allow the rolls to rise again for another 45 minutes to 1 hour, until they have doubled in size.
While the rolls are rising, preheat your oven to 350°F (180°C).
In a small bowl, beat an egg. Brush the tops of the risen rolls with the egg wash, then sprinkle sunflower seeds on top for added flavor and texture.
Place the pan in the preheated oven and bake for 25 minutes, or until the rolls are golden brown and cooked through.
Once baked, transfer the rolls to a wire rack to cool slightly before serving.
