CINNAMON ROLL CAKE RECIPE
Ingredients:
For the cake:
4 eggs
1/3 cup agave, or maple syrup (80ml)
1/4 cup melted butter (60ml)
1 tsp vanilla extract
1 1/3 cups Greek yogurt (340g)
2 cups oat flour, or ground oats (200g)
1 cup spelt or whole wheat flour (130g)
1/4 cup cornstarch (30g)
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
For the filling:
1/2 cup date paste (130g)
1/2 cup unsweetened applesauce (130g)
2 tbsp cinnamon powder
For the glaze:
1/2 cup coconut milk (120ml)
1 tbsp agave, or maple syrup
1/2 tsp vanilla extract
NUTRITIONAL INFO (per serving):
211 calories, fat 6.3g, carb 31.3g, protein 8.7g
Preparation:
Preheat the oven to 350°F (180°C).
For the filling, in a small bowl, combine date paste, applesauce and cinnamon powder. Set aside.
In a large bowl, beat eggs with your choice of sweetener (agave or maple syrup). Add melted butter, vanilla extract, and Greek yogurt. Whisk until well combined.
In the same bowl add all the dry ingredients: oat flour, spelt flour, cornstarch, baking powder, baking soda, and salt to the wet ingredients. Gently stir with a whisk until all the flour is incorporated.
Pour the batter into a greased half-sheet pan or a similarly sized baking pan. Use a spatula to smooth the top.
Drop small spoonfuls of the prepared cinnamon filling over the cake batter. Using a butter knife, swirl it in to create a marble effect.
Bake for 20-25 minutes, ensuring not to overbake.
Allow the cake to cool for a few minutes. Meanwhile, mix coconut milk, sweetener, and vanilla extract for the glaze.
Drizzle the glaze over the cake using a spoon.
Slice into 15 equal pieces and serve. Enjoy!
