Today I'm going to show you how to make rocky road fudge.
Unlike traditional rocky road bars that are often loaded with sugar and unhealthy fats, this recipe uses wholesome ingredients.

ROCKY ROAD BARS RECIPE
(makes 12 bars)
7oz dark chocolate (200g)
1/3 cup natural peanut butter (85g)
1/4 cup date paste (75g)
1/2 cup almonds (80g)
1/2 cup walnuts (60g)
1 cup puffed rice (30g)
1/4 cup dried cranberries (35g)
NUTRITIONAL INFO (per bar):
199 calories, fat 12.7g, carb 21.1g, protein 4.7g
Instructions:
Soak the dates in hot water for 10 minutes, then process for 1-2 minutes until a smooth paste is formed. Alternatively, blend in a food processor if using fresh dates.
Toast the almonds and walnuts in a skillet over medium heat for 5 minutes, or until lightly golden and aromatic.
In a microwave-safe bowl, add the dark chocolate and melt it in 30-second increments, stirring in between, until smooth and creamy.
Add the natural peanut butter and sweet date paste to the melted chocolate. Stir well with a spoon until fully combined.
Fold in the toasted almonds, walnuts, puffed rice, and dried cranberries. Mix thoroughly until all ingredients are evenly coated in the sticky mixture.
Line an 8-inch (20cm) brownie pan with parchment paper. Spoon the mixture into the pan and spread it evenly with a spoon or spatula. Press firmly to pack all the ingredients together.
Allow the mixture to cool completely. Then, transfer the pan to the freezer for about 1 hour or until the chocolate is fully set.
Once set, remove the pan from the freezer and place it on a cutting board. Slice the chilled mixture into 12 equal pieces using a sharp knife.
For the best crunchy texture, store the healthy rocky road bars in the refrigerator.
