PROTEIN CHEESECAKE RECIPE
(makes 1 large or 2 small servings)
Ingredients:
1 large egg
1/2 cup skyr (130g)
1 tbsp maple syrup or agave
1 tbsp cocoa powder
2 tbsp ground oats, or oat flour
1 tbsp chickpea flour
NUTRITIONAL INFO (per serving):
284 calories, fat 6.9g, carb 32.4g, protein 26.2g
Preparation:
In a small bowl using a hand mixer, whisk all the ingredients together.
Pour the mixture into a greased ramekin or some other microwave safe bowl, and smooth the top.
Microwave on medium heat in 45 second increments, for 3-4 minutes in total, it depends on your microwave.
Let it cool a bit, then wrap it up and place in the fridge to chill for 1 hour.
Invert on a plate and it's ready to be served.
