الفطائر الطريه لذيذه جداً عند تحضيرها بهذه الطريقة اليمنية السهلة!
Soft bread is so delicious when made in this Yemeni way!


مكونات:


نصف كوب حليب دافئ
ملعقة كبيرة خميرة
ملعقة كبيرة سكر
نصف كوب من الزبدة المذوبة
ربع كوب سمن
ثلاث صفار بيض (يترك جانباً)
٥ بيضات كاملة ناقصة ثلاث صفار بيض
ثلث كوب زبادي(٨٠)
خمسة أكواب من الدقيق متعدد الأغراض (١٠٠٠ جرام)
ملعقة كبيرة ملح
نصف كوب ماء
جبن للحشو (اختياري)
الحبة السوداء وبذور السمسم للتزيين

التعليمات:

اخلطي الحليب الدافئ والخميرة والسكر في وعاء. دع الخميرة تنشط لمدة خمس دقائق.

أضيفي الزبدة المذابة والسمن وخمس بيضات كاملة (احتفظي بـ 3 صفار منها لدهن البيض) واللبن والدقيق والملح والماء. نعجن المكونات بالمضرب اليدوي لمدة عشر دقائق حتى الحصول على قوام متوسط النعومة.

نترك العجينة لترتاح ويتضاعف حجمها لمدة ساعتين.

تُقطع العجينة إلى سبعة عشر قطعة، وتُسطح وتُطوى على شكل مثلثات. اختياريا، محشوة بالجبن.

ضعي المثلثات في صينية مدهونة بالزبدة. تتسطح قليلا. دهنها بصفار البيض المحفوظ.

نرش فوقها الحبة السوداء والسمسم. دعهم يستريحون لمدة 30 دقيقة.

سخني الفرن إلى 450 درجة فهرنهايت (250 درجة مئوية). اخبزيها لمدة 20 دقيقة، مع المراقبة.

أخرجه من الفرن. غطيها بمنشفة لمدة 10 دقائق.

Ingredients:

Half cup warm milk
One tbsp yeast
One tbsp sugar
Half a cup melted butter
One fourth of a cup ghee
Five whole eggs minus 3 egg yolks
Three egg yolks (set aside for the egg wash)
One third of a cup yogurt
Five cups all-purpose flour
One tbsp salt
Half a cup water
Cheese for stuffing (optional)
Black seeds and sesame seeds for topping
Instructions:

Mix warm milk, yeast, and sugar in a bowl; let yeast activate for five mins.
Add melted butter, ghee, five whole eggs (save 3 yolks from them for the egg wash), yogurt, flour, salt, and water. Knead for ten minutes by hand mixer until medium-soft consistency.
Let dough rest and double in size for two hours.
Cut dough into seventeen pieces, flatten, and fold into triangles. Optionally, stuff with cheese.
Place triangles in a greased pan; flatten slightly. Brush with the saved egg yolks.
Sprinkle black and sesame seeds on top. Let them rest for 30 mins.
Preheat oven to 450°F (250°C). Bake for 20 mins, monitoring.
Remove from oven; cover with a towel for 10 mins.
