Kabab Karahi
Ingredients for Chicken Seekh Kabab:
Chicken mince 1 kg
Onion (cubes) 1 cup
Green coriander (chopped) 1 cup
Garlic pods 2
Ginger pods 2-3
Red chili flakes 1 tbsp
Coriander powder 1 tbsp
Cumin powder 1 tbsp
Salt 1 tsp
Garam masala powder 1 tsp
Red chili powder 1 tbsp
Oil (for frying) as required
Heated coal (1-2)
Oil (for smoke) 1 tsp
Ingredients for Kabab Karahi:
Oil 1/2 cup
Garlic (chopped) 1 tbsp
Ginger (chopped) 1 tbsp
Cumin seeds 1 tbsp
Green chilies (chopped) 1/2 cup
Tomatoes (chopped) 2 cups
Red chili powder 1 tbsp
Coriander powder 1 tbsp
Cumin powder 1 tbsp
Salt 1 tsp
Prepared seekh kabab
Yogurt 1 cup
Green coriander (chopped) as required
Green chilies (sliced) as required
Ginger (julienne) as required
Directions for Chicken Seekh Kabab:
1. In a chopper add onion, green coriander, ginger, garlic, red chili flakes, coriander powder, cumin powder, salt, garam masala powder, red chili powder and chop it well.
2. Now grease your hands with oil and tread the chicken mince onto wooden skewers.
3. Now shallow fry them until fully done. Place heated coal in the pan and drizzle oil on them.
4. Cover and smoke for 1-2 minutes. Your chicken seekh kabab are ready. Cut them into 3 pieces and set aside.
Directions for Kabab Karahi:
5. In a deep pan heat oil and add garlic, ginger, cumin seeds and sauté for a minute.
6. Add tomatoes, green chilies, red chili powder, coriander powder, cumin powder, salt and cook until tomato gets soft.
7. Add cooked kabab and cook for 2-3 mins. Add yogurt and cook until oil separates.
8. Your Kabab Karahi is ready. Garnish it with green coriander, green chilies, ginger and serve.

Cooking time: 20-30 mins
