Chicken Mandi
Ingredients for Steamed Chicken:
Whole chicken (with skin) 1
Red chili powder 1 tbsp
Coriander seeds (crushed) 1 tbsp
Cumin powder 1 tbsp
Paprika 1 tsp
Cinnamon powder 1 tsp
Salt 1 tsp
Lemon juice 2 tbsp
Saffron 1 tsp
Oil 1/4 cup
Water (for steam) 1 liter
Ingredients for Nuts Pulao:
Oil 1/4 cup
Onion (chopped) 1 cup
Cumin seeds 1 tbsp
Star anise 2
Raisins 1/2 cup
Leftover water of chicken
Salt 1 tsp
Soaked rice 3 cups
Cashew nuts 1/2 cup
Almonds (crushed) 1/2 cup
Directions for Steamed Chicken Preparation:
1. Take whole chicken and cut it into 2 halves. Prick holes in it with the fork. Set aside.
2. To prepare marinade, in a bowl add red chili powder, crushed coriander seeds, cumin powder, paprika, cinnamon powder, salt, lemon juice, saffron, oil and mix it well.
3. Pour this prepared marinade over the chicken and marinate for 2-3 hours.
4. In a steamer add water and bring it to a boil. Now place marinated chicken in it and cover and steam over low flame 30-35 mins. Set aside and reserve the water in the steamer for later use.
Directions for Nuts Pulao Preparation:
5. In a pot heat oil and add onion, cumin seeds, star anise and sauté for a minute.
6. Add raisins, and sauté for another minute. Add leftover water of chicken and bring it to a boil. Add salt and mix it well.
7. Add soaked rice and cook until 80% water dries out.
8. Now add cashew nuts, almonds and cover and steam over low flame for 10-12 mins.
9. Your Chicken Mandi is readt. Serve these rice with steamed chicken.
