Achari Stuffed Tinday
Ingredients for Achari Masala:
Cumin seeds 1 tsp
Black peppercorns 1 tsp
Fennel seeds 1 tsp
Fenugreek seeds 1 tsp
Red chili flakes 1 tbsp
Nigella seeds 1 tsp
Red chili powder 1 tbsp
Coriander powder 1 tbsp
Turmeric powder 1/2 tsp
Salt 1 tsp
Ingredients for Achari Filling:
Oil 3 tbsp
Onion (chopped) 1 cup
Tomato (chopped) 1 cup
Dried pomegranate seeds 1 tbsp
Lemon juice 2 tbsp
Prepared achari masala
Water 1/2 cup
Gram flour 1 tbsp
Ingredients for Achari Stuffed Tinday:
Tinday 10-12
Prepared achari filling as required
Oil 1/4 cup
Onion (chopped) 1 cup
Ginger garlic paste 1 tbsp
Tomato puree 1 cup
Achari masala 1 tbsp
Red chili powder 1 tsp
Salt 1 tsp
Stuffed tinday
Water 1 ½ cup
Green coriander (chopped) as required
Directions for Achari Masala Preparation:
1. In a grinder add cumin seeds, black peppercorns, fennel seeds, fenugreek seeds, red chili flakes and grind them well.
2. Now transfer these ground spices to a bowl and add nigella seeds, red chili powder, coriander powder, turmeric powder, salt and mix it well. Set aside.
Directions for Achari Filling Preparation:
3. In a pan heat oil and add onion. Cook until translucent. Add tomatoes, dried pomegranate seeds, lemon juice, prepared achari masala and cook for 2-3 mins.
4. Add water, gram flour and cook for 4-5 mins. Set aside.
Directions for Achari Stuffed Tinday Preparation:L
5. Take the tinday and make holes in them from one side for the filling baking taking small part of the tinday out of them in the center. Reserve the leftover tinday for later use.
6. In a pot heat oil and add onion, cook until translucent. Add ginger garlic paste and sauté for a minute.
7. Add tomato puree and cook for a minute. Add achari masala, red chili powder, salt and cook for 2-3 mins.
8. Add leftover tinday and cook until they get soft.
9. Now add stuffed tinday, water and cover and cook until fully done.
10. Dish them out and garnish with green coriander. Your Achari Stuffed Tinday are ready.
