Malai Boti Pulao

Ingredients for Malai Boti:
Boneless chicken 800 g
Yogurt 1 cup
Green chili paste 3 tbsp
Ginger garlic paste 1 tbsp
Black pepper (crushed) 1 tsp
Salt 1 tsp
Lemon juice 2 tbsp
Cumin powder 1 tbsp
Cream 1/2 cup
Oil 2 tbsp
Heated charcoal 1
Oil (for smoke) 1 tsp

Ingredients for Malai Boti Pulao:
Oil 1/4 cup
Black peppercorns 10-15
Cumin seeds 1 tbsp
Star anise 2
Green cardamom 4-5
Onion (sliced) 1 cup
Ginger garlic paste 1 tbsp
Coriander powder 1 tbsp
Black pepper (crushed) 1 tsp
Salt 1 tbsp
Water 5 cups
Rice soaked 3 cups
Malai boti
Green chilies as required
Lemon slices as required

Directions for Malai Boti Preparation:
1. In a bowl add boneless chicken, yogurt, green chilies paste, ginger garlic paste, black pepper, salt, lemon juice, cumin powder, cream and mix it well.
2. In a pan heat oil and add marinated chicken. Cook until chicken is fully done.
3. Place a heated coal on aluminum cup in the center of the pan, drizzle oil and cover and smoke for 1-2 mins. Set aside.
Directions for Malai Boti Pulao Preparation:
4. In a pot heat oil and add whole black pepper, cumin seeds, star anise, green cardamom and sauté for a minute.
5. Add onion and cook until light brown in color. Add ginger garlic paste, coriander powder, black pepper crushed, salt and mix it well.
6. Add water and cook until it starts to boil. Add rice and cook until 80% water dries out.
7. Add malai boti, green chilies, lemon slices on top and cover and steam over low flame for 10-12 mins.
8. Your Malai Boti Pulao is ready. Serve and enjoy.

Cooking time: 40-45 mins
Servings: 4-5
