Tikka Rice Platter

Ingredients for Chicken Tikka:
Chicken leg & thigh piece 3-4
Yogurt 1 cup
Tikka masala 3 tbsp
Ginger garlic paste 2 tbsp
Oil 1 tbsp
Chili sauce 2 tbsp
Lemon juice 2 tbsp
Orange food color 1 tsp
Oil (for frying) 1/2 cup
Heated charcoal 1-2
Oil (for smoke) 1 tsp

Ingredients for Masala Rice:
Oil 3 tbsp
Cumin seeds 1 tbsp
Green cardamom 2-3
Star anise 1-2
Black cardamom 2-3
Onion (chopped) 1 cup
Coriander powder 1 tsp
Red chili powder 1 tsp
Cumin powder 1 tsp
Salt 1 tbsp
Water 5 cups
Soaked rice 3 cups

Directions for Chicken Tikka Preparation:
1. Take the chicken pieces and place cuts on them.
2. Transfer them to a bowl and add yogurt, tikka masala, ginger garlic paste, oil, chili sauce, lemon juice, orange food color and mix it well. Marinate it for 30 mins.
3. In a pan heat oil and add marinated chicken pieces. Cook each side for 1-2 mins. Add leftover marinade.
4. Now cover and cook until chicken is fully done. Set aside.
Directions for Masala Rice Preparation:
5. In a pot heat oil and add cumin seeds, green cardamom, star anise, black cardamom and sauté for a minute.
6. Add onion and cook until onion gets brown. Add coriander powder, red chili powder, cumin powder, salt and mix it well.
7. Add water and bring it to a boil. Add rice and cook until 80% water dries out.
8. Now cover and steam over low flame for 10-12 mins.
9. Serve these Masala Rice with Chicken Tikka and enjoy.
Prep time: 15-20 mins
Cooking time: 30-40 mins
Servings: 3-4
