INGREDIENTS
400g (2 ½ cups) of all-purpose flour;
10 g (1 tbsp) fresh yeast;
60ml (¼ cup) warm water;
8g (1 tsp) vanilla sugar;
1 egg;
30g (2 tbsp) sugar;
5g (1 tsp) salt;
100ml (⅓ cup + 1 tbsp) warm milk;
50g (¼ cup) soft butter;
500ml (2 cups) pastry cream;
Egg wash;
Powdered sugar.
 
METHOD

Add flour into the large bowl and make a well in the center. Crumble the fresh yeast into the well, add warm milk and water, sugar, vanilla, salt, and egg. 
Whisk liquids together, adding portions of flour from the sides of the bowl. When the dough becomes too thick to work with, start kneading it with your hands.
When the dough becomes elastic, add butter and knead until all of the butter is incorporated. Form the dough into a ball and cover it with plastic. Set aside for 1 hour.
Dust your working place with some flour, place the dough on top and roll out into an even disk about 1.5 cm thick.
Cut out donuts using 2 ring molds. Place donuts onto a parchment-covered baking sheet and set aside for 30 minutes more.
Brush donuts with egg wash and top with chocolate chips. 
Bake at 180°C/350°F for 20 minutes. When the donuts have cooled down, cut them in half, add pastry cream into the middle, and dust with powdered sugar.
