Gratin Zucchini Rolls: The Recipe Full Of Taste To Do In The Oven!

INGREDIENTS
2 zucchini
4 boiled potatoes
30ml (2 tbsp) of olive oil
40 g (⅓ cup) of parmesan
4 sundried tomatoes in olive oil, chopped
160g (1 ¼ cup) of cheese, cut into cubes
80g (½ cup) of breadcrumbs
50g (½ cup) of parmesan
Salt and pepper
½ tsp of oregano

METHOD
1. Preheat the oven to 190°C/375°F. Brush the baking pan with olive oil.
2. Slice zucchini thinly.
3. Mash potatoes and mix the mash with olive oil, 40 g of parmesan, tomatoes, salt and pepper.
4. Place a spoonful of the mash on one end of the zucchini slice, place a piece of cheese in the middle, and cover with some more potato mash. Roll carefully.
5. Mix breadcrumbs with 50 g of parmesan, salt, pepper and oregano.
6. Sprinkle the bottom of a baking pan with the breadcrumbs mixture, layer rolls on top, brush with olive oil, and cover with more breadcrumbs.
7. Bake for 30 minutes.
