INGREDIENTS (Please check the website for detailed info)

* Soy Sauce Pickling Solution
4 Tbsp soy sauce (I used Kikkoman® Gluten-Free Soy Sauce)
2 Tbsp rice vinegar
2 Tbsp sugar

* Daikon Soy Sauce Pickles
1/3 daikon radish (1 lb, 454 g)
2 tsp kosher/sea salt (use half for table salt)
1 dried red chili pepper

* Cucumber Soy Sauce Pickles
3 Persian/Japanese cucumbers (1 lb, 454 g)
2 tsp kosher/sea salt (use half for table salt)
1 dried red chili pepper
1 knob ginger

* Celery Soy Sauce Pickles
5 stalks celery (6 oz, 170 g)
2 cloves garlic
½ tsp sesame oil (roasted) (I used Kikkoman® Sesame Oil)

* Komatsuna Soy Sauce Pickles
1 bunch komatsuna (Japanese mustard spinach) (6 oz, 170 g)
1 Tbsp katsuobushi (dried bonito flakes) (Skip for vegan/vegetarian)
