INGREDIENTS
125ml (3 medium eggs) of egg whites
220g (1 cup) of vanilla yogurt
Zest of 1 lemon
A pinch of salt
5g (2 tsp) of xanthan gum

METHOD
1. Preheat the oven to 160°C/320°F. Line a small loaf pan with parchment.
2. Beat cold egg whites with a pinch of salt and xanthan gum until stiff peaks form.
3. Whisk yogurt with lemon zest.
4. Fold egg whites into the yogurt mixture.
5. Carefully transfer into a prepared pan and bake for 40 minutes.
