¼-½ 6-lb watermelon
For the Pickling Solution
4 Tbsp rice vinegar (unseasoned)
2 Tbsp soy sauce
1 Tbsp roasted sesame oil
4 Tbsp sugar
1 Tbsp toasted white sesame seeds (optional; skipped for the video tutorial)
a few strips ginger (optional; skipped for the video tutorial)

1:05 Add the rind to the pickling solution.
1:10 Mix and allow to pickle in the fridge for 2-3 hours or up to overnight.
