INGREDIENTS
1kg of beef
Salt
Pepper
Flour
Butter
200ml (3/4 cup) + 330ml (1 1/2 cups) + 330ml (1 1/2 cups) of beer
3 Onions
Thyme
2 bay leaves
25g (2 tbsp) of light brown sugar

METHOD
1. In a bowl with the beef add the salt and pepper and flour. Mix with hands how the meat absorbs the flour and seasons.
2. Add the butter to a pan and arrange the beef slices. Fry them for a few minutes until they are brown and then remove from the pan.
3. Deglaze the pan where the meat is fried with the beer and then remove it from the heat.
4. Cut the onion into rings and transfer them to the pan with butter. Fry until the onions are soft. Remove from the heat.
5. Add the butter to a pan and then add the fried beef and onion. Pour the deglazed mixture, and add the thyme, bay leaves, and beer. Cover with a lid and let it cook for 30 minutes.
6. Add the light brown sugar and beer and mix. Cover with a lid and let it cook for 90 more minutes. Remove from the heat.
7. Serve stew with the puré and enjoy.
