INGREDIENTS
9 eggs
1 small bunch of fresh spinach
2 small boiled beets
15g (3 tbsp) turmeric
5g (2 tsp) dijon mustard
70g (½ cup) mayonnaise
Salt and pepper
Paprika for serving

METHOD
1. Place room-temperature eggs into a pot of warm water and place it over medium-high heat. Cook for 15 minutes, drain, and transfer into ice-cold water immediately.
2. Peel the eggs.
3. Prepare 3 tall blender cups. Place fresh spinach in one of them and blend it with water until puree forms. Fill another cup with beets and water and blend again. Lastly, whisk turmeric with water in the third cut.
4. Place 3 eggs into each container, mix carefully, and set aside for 1-2 hours.
5. Before using rinse and dry each egg.
6. Cut eggs in half, remove the yolk, and puree it with mayonnaise, mustard, salt, and pepper. pipe the yolk mixture back into the white. Sprinkle with some paprika.
