INGREDIENTS
 
210ml (3/4 cup) of milk
110ml (1/2 cup) of water
7g of dry yeast
12g (1 tbsp) of sugar
110ml (1/2 cup) of vegetable oil
520g (4 1/4 cups) of flour
10g (1/2 tbsp) of salt

For filling
220g (1 cup) of ricotta
160g of spinach
Olive oil
Salt
Pepper
Egg white

Egg for egg wash
Cheese
 
METHOD

 
1. In a bowl add the milk, water, yeast, sugar, and oil and whisk. Add the flour and salt and continue with mixing. When dough starts to form knead it with hands to obtain a smooth dough. Cover with cling film and let it rise for 40 minutes, or until it is double in volume.
2. After time has elapsed punch out the gas from the dough and transfer to the baking tray covered with parchment paper. Flatten it with your hands and cover it with a cloth. Let it rise for 20 minutes.
3. In a bowl add the ricotta, spinach, olive oil, salt, pepper, and egg white and mix with a spatula to combine.
3. After 20 minutes make the holes with the ice cube container and fill with prepared filling.
4. Brush with egg and arrange the cheese on top of the filling. Transfer to the oven and bake at 190°C/375°F for 40 minutes.
5. Cut on squares after baking and serve on serving dish.
