Cooking a vegetable soup that's healthy and SO delicious 😋



مكونات:

أربع حبات من البطاطس المقشرة (600 جرام)، مقطعة إلى قطع صغيرة
بصلة واحدة (150 جرامًا) مفرومة
زيت الزيتون
ملعقة كبيرة زبدة (15 جرام)
جزرتان (80 جرامًا) مبشورتان
ملعقة صغيرة من الثوم (10 جم)، مبشور
حبة كوسة (160 جرامًا)، مقطعة إلى قطع صغيرة
ملعقة صغيرة ملح
ملعقة صغيرة من مرقة الخضار
ملعقة صغيرة أوريجانو
ملعقة صغيرة فلفل أسود
ملعقة صغيرة من رقائق الفلفل الحار
فص واحد من الثوم
الفلفل الحار
طماطم
شرائح الخبز
فلفل أحمر
البقدونس المفروم

تعليمات:

اسلقي البطاطس في الماء لمدة 15 دقيقة.

يُقلى البصل المفروم في زيت الزيتون، ويُضاف الزبدة، والجزر المبشور، والثوم، والكوسة، والملح، ومرق الخضار، والأوريجانو، والفلفل الأسود، ورقائق الفلفل الحار. يقلب جيدا.

تُمزج الخضار المقلية مع البطاطس المسلوقة (دون تصريف الماء). يُطهى على نار متوسطة لمدة 20 دقيقة.

يُمزج الثوم والفلفل الحار والطماطم في الخلاط ويوضع جانبا.

امزجي خليط الخضار والبطاطس باستخدام خلاط بمقبض للحصول على قوام ناعم.


نحمص الخبز المقطع في صينية الفرن اووفي مقلاه مع زيت الزيتون.

يُزيّن الحساء بمزيج من زيت الزيتون والبابريكا والبقدونس المفروم.

تتبل الصلصة بالملح، ثم توزع على الخبز المحمص، وتقدم مع الحساء.

Ingredients:

Four peeled potatoes (600g), cut into chunks
One onion (150g), chopped
Olive oil
One tbsp butter (15g)
Two carrots (80g), grated
One tsp garlic (10g), grated
One zucchini (160g), cut into chunks
One tsp salt
One tsp vegetable bouillon
One tsp oregano
One tsp black pepper
One tsp chili flakes
One clove garlic
Hot peppers
Tomatoes
Sliced bread
Paprika
Chopped parsley
Instructions:

Boil potatoes in water for 15 minutes.
Saute chopped onion in olive oil, add butter, grated carrots, garlic, zucchini, salt, vegetable bouillon, oregano, black pepper, and chili flakes. Stir well.
Combine sauteed vegetables with boiled potatoes (without draining the water). Cook over medium heat for 20 minutes.

Blend garlic, hot peppers, and tomatoes into salsa consistency. Set aside.

Blend the vegetable-potato mixture with a handle held blender into a smooth consistency.

Toast sliced bread on a griddle with olive oil.

Garnish soup with a mixture of olive oil and paprika, and chopped parsley.

Season salsa with salt, spread on toasted bread, and serve with the soup.
