BADAMBURA recipe.

INGREDIENTS:

For the dough:
- 1 kg. Flour.
- 3 egg yolks.
- 1 tsp. Dry yeast.
- 2 tsp. Sugar.
- 1 glass (200 ml.) of warm water.
- 1 glass (200 ml.) Yogurt.
- 300 ml. Milk.
- 150 gr. Solid vegetable oil.
- 1 pinch of Salt.
- 1 package (5 gr.) Vanillin.

For the filling:
- 450 gr. Ground almonds, walnuts or hazelnuts.
- 350 gr. Sugar.
- 1 tsp, or 8-9 pieces of ground Hil.
To grease the tops:
- 400 gr. rendered solid vegetable oil.
- Powdered Sugar to sprinkle on top for added taste.

PREPARATION:

1. First, in a suitable container, 1 tsp. dry yeast, 1 tsp. flour and 1 tbsp. we add powdered sugar. Add 1 glass (200 ml) of warm water to it, mix well and let it activate at room temperature.
2. Sift 1 kg of flour into the mixing bowl, add 1 pinch of salt, 1 packet of vanilla, mix and make a hole in the middle. Put the yolks of 3 eggs, 1 cup of yogurt, 1 tbsp. powdered sugar, activated yeast, 300 ml. warm milk and 150 gr. adding solid vegetable oil softened at room temperature, we knead a dough of medium hardness. If our dough is soft, you can adjust it by adding a little flour, if it is hard, add warm water or warm milk. Let the finished dough rest for 15-20 minutes. If the dough is too hot, your badamburas will be too puffy like a bun.
3. In the meantime, melt 400 grams of solid vegetable oil and put it aside.
4. 450 gr for filling. 350 g of ground almonds, walnuts or hazelnuts. We prepare our stuffing by adding 1 teaspoon of powdered sugar and cardamom (or 8-9 cardamoms beaten).
5. Divide the rested dough into 10 equal logs. We spread the logs five by five at a time, grease them and stack them on top of each other. As we add each layer, we slowly pull and stretch the layers to form a rectangle so that it is easy to cut the strips and get the same size badamburas.
6. 1-2 cm thick parts of the edges of the tops, which we first oiled and stacked on top of each other. We cut it across so that our badamburas are neat and the same size. We also wrap the excess that comes out of the edges like badambura and cook. Then 4 or 3 cm as desired. we cut wide strips. We 4 cm. we cut strips and 16 badambura came out of every 5 tops. As shown in the video, we fold the strips we cut into a roll, cover the outside and let it rest. In the meantime, we roll out the other 5 logs, grease them, cut them and twist them.
7. Starting with the rolls that we wrapped first and left to rest, make a hole in our rolls and put 2 tbsp. We prepare our badamburas by leaving the filling and shaping them.
8. Without waiting for the ready Badamburas, arrange them sparsely on the baking sheet and bake them in an oven preheated to 150 C. upside down for 25-30 minutes. We take care not to let it brown.
9. After the baked Badamburas cool down, we sprinkle powdered sugar on them.
