Learn how to make this classic Peruvian Fried Rice Recipe.
Add Chicken or make it with out to make a Vegan Version ( you will also have to substitute the Egg)
As an added Bonus, I will also be making Lomo Saltado, Stir Fried Beef with French Fries.
Both are typical Peruvian Dishes and Seriously Delicious!!!

Arroz Chaufa con Pollo- Feeds 4 To 6 People
For Rice
1 Cup Basmati Rice
1 3/4 Cups Water
1.5 Tablespoons Chicken Base

5 Cups Chicken Thighs- Cut into small pieces
1 Medium Onion- Diced
2 Tablespoons Ginger- Chopped
2 Tablespoons- Garlic- Chopped
1 Red Pepper Diced
1 Bunch Scallions- Sliced at an angle
1-2 Tablespoons Oil(Either Vegetable or Olive Oil)
3 Eggs

Sauce
1/2 Cup Soy Sauce
1/4 Cup Honey
1 Teaspoon Sesame Oil
! Teaspoon Cumin
Salt and Black Pepper to Taste

Lomo Saltado
3 Medium Idaho Potatoes- Cut into French Fries
2 Pounds of Either Ribeye Steak or Sirloin Steak
2 Medium Plum Tomatoes- Sliced
2Tablespoons Garlic- chopped
1 Medium Red Onion- Sliced
1 Tablespoon Siracha
2 Ounces Soy Sauce
Juice of 1/2 Lime ( 1 Tablespoon)
2-3 Tablespoons Cilantro- Chopped
Olice Oil as needed
Salt and pepper to Taste
