Creamy Chicken Piccata | Easy Chicken Recipe

Learn how to make an easy and delicious Creamy Chicken Piccata, served over Lemon Herb Rice with Oven Roasted Vegetables.

Ingredients: This recipe feeds 6-8 People. You can cut the recipe in half to feed 3 to 4 people. You will use more oil than what the recipes calls, to fry the cutlets in.

3 Pounds Chicken- Boneless and Skinless Breasts, or Thighs, or a combination of the two. Classically it's done with only thin sliced breasts.
Salt and Black Pepper for seasoning-as needed
8 Tablespoons all purpose flour
2 Tablespoons Olive Oil
2 1/2 Cups Chicken Stock
1/2 Cup Dry White Wine- I use Chenin Blanc
2/3 Cup lemon Juice- Fresh is Best
4 Tablespoons of either Heavy Cream or Coconut Milk if you need it to be Dairy Free
2 Tablespoons Chopped Parsley
1/2 Cup of Capers ( Capotes Capers)

Roast Vegetables
1 of Each- Eggplant, Zucchini, Yellow Squash, Red pepper, Yellow pepper
Cooking Spray
Salt, Black Pepper, Granulated Garlic, Thyme, Basil

Lemon Herb Basmati Rice
1 Tablespoon Olive Oil
3 Cups Basmati Rice
4 1/2 Cups Water, Seasoned with 2 Tablespoons Chicken Base and brought to a boil
3 Tablespoons Lemon Zest
1 Teaspoon Salt
1 Teaspoon Dried Basil
1 Teaspoon Dried Oregano
