一起来做老式“软麻花”,也是小时最爱的“卷花甜甜圈”,韩国称为“Kkwabaegi: 꽈배기”。面团不需要揉面,省力省事。整形那里超好玩有趣,卷成麻花型。成型和炸的技巧也很重要哦,油温控制得好,只翻面一次就能炸得美。外表黄金,麻花卷膨胀得饱满圆鼓鼓。趁温最简单的沾上肉桂糖,就已经很香脆可口了。先咬到一层薄薄的酥皮和肉桂糖,内部口感柔软蓬松且拉丝。大人小孩都爱吃~
收藏方式:新鲜做好立刻吃口感最佳。如果要隔天吃的,建议不沾肉桂糖,收在密封塑料袋室温存留3天,要更久收冰库冷冻,要吃前解冻用toaster中小火烤热回软,沾肉桂糖再吃,会好像刚炸好新鲜的柔软口感哦~
Let’s make 老式“软麻花”old-fashioned “Twisted Donuts”, one of my childhood favorites, a.k.a. “Kkwabaegi: 꽈배기” in Korea. No kneading required for the dough, saves effort and trouble. The shaping technique was super fun and interesting, rolled into twisted intertwine shape. The shaping and frying technique are also very important If the oil temperature is well controlled, donuts can be fried beautifully by only flipping once. Golden appearance, twist rolls are plumped and round. Simply coat in cinnamon sugar while warm, already very crispy and delicious. First bite you will taste a thin layer of crispiness and cinnamon sugar, with very soft fluffy stringpull interior structure. Both adults and children love them~
Storage Method: Best eaten freshly made. To store till next day, recommended not to coat with cinnamon sugar, keep in airtight ziplock bag at room temperature up to 3 days, for longer period keep in freezer. Thaw before eating, reheat with toaster medium low heat to soften, coat with cinnamon sugar, taste fresh and soft as if they’re just fried ~

14g Unsalted Butter (Melted) 无盐牛油(融化)
120g Milk (Room temp.) 牛奶 (室温)
15g Caster Sugar细砂糖
3.5g Instant Dry Yeast速溶酵母
28g Egg 鸡蛋
180g All Purpose Flour普通中筋面粉
1g Salt盐
Enough Cooking Oil (Frying) 适量 食用油 (炸)
(Medium High Heat preheat oil, Medium Low heat control oil Temperature: 175C)
(中大火预热油,中小火控制油温:175C)
=Cinnamon Sugar 肉桂糖=
40g Caster Sugar细砂糖
1.5g Cinnamon Powder 肉桂粉
