If you've never tried borek before, then now is a great time to start. This delicious pastry is usually made from phyllo dough stuffed with spinach, cheese, potatoes, or meat, but we've decided to put a fun fall twist on this delicious treat. Our pumpkin & spinach borek is the perfect pastry for the colder months!

*Ingredients:*

- 1 lb pumpkin, chopped
- 10 oz spinach
- 10 oz feta cheese, crumbled
- 6 sheets of phyllo dough
- 3 eggs
- ¾ cup plain yogurt
- ⅓ cup olive oil
- salt & pepper
- ½ tsp mint
- 1 tsp black cumin

_Bake at 325°F for 45 minutes._
