Ingredients:
– 3 slices of pancetta (rolled bacon)
– 50 g of Gorgonzola
– 100 g pears in syrup (canned)
– 1 tablespoon of fresh cream
– 1 tablespoon of red port
– 12 sprigs of flat-leaf parsley
- pepper
Gently heat the pancetta slices in a non-stick pan, increase the heat when the fat begins to melt and fry until golden brown. Drain on kitchen paper.
Using a fork, mash the gorgonzola and cream.
Cut the pears into small cubes, add port and mix. Divide between appetizer spoons. Add gorgonzola, pepper and finally crushed pancetta.
Garnish with parsley and serve at room temperature.

Ingredients:
For Caesar in the middle:
– 150 g of chicken
– 10 g of desalted capers
– 2 anchovy fillets
– 40 g of butter
– 60 g of mayonnaise
– 15 g of white wine
– White pepper to taste
– Salt for taste
For the cheese cake:
– 200 g of 00 flour
– 140 g of grated parmesan
– 170 g of butter
- 1 egg
– 2 g of salt
For the salad topping:
– 150 g romaine lettuce (outer leaves without white parts)
– 250 g of water
– 0.2 g of Xanthan (xanthan gum)
– 17 g Agar (vegetable gelatin)
– salt for taste
– ground white pepper to taste
To finish:
– Edible flowers (borage or violets)

– pecans
– gorgonzola 50g
– a tablespoon of thick cream 18%
– pickers
Wash and dry the pears, cut into thick slices. Using a fork, mash the gorgonzola and cream. Place one pear slice, squeeze the gorgonzola, cover with another slice, add half a grape and a pecan. Pin everything together with a picker.
