Easy One Bowl Moist Double Chocolate Muffins Recipe | No Egg | No Milk | No Butter
:: Cook Me Food ::

These rich double chocolate chip muffins do not disappoint a chocolate lover’s dream. It’s soft and super moist, bursting with chocolate flavor and so easy to make. It only takes less than 10 minutes to whip up everything in one bowl and no fancy ingredients involved – and yes, NO Egg, NO Milk and NO Butter.

You’ll need:
• 1 cup brown sugar (packed)
• 1 ½ cup all-purpose flour (spooned and leveled)
• 1/3 cup unsweetened cocoa powder (preferably dutch-processed)
• ½ tsp baking soda
• 1 tsp baking powder
• ½ tsp salt
• 1 cup + 1 tbsp lukewarm water
• ½ cup canola/vegetable oil
• 1 tsp vanilla extract
• ½ tsp white vinegar/lemon juice
• 1 cup mini semi-sweet chocolate chips + more for toppings

Makes 12 servings
*Using standard muffin/cupcake size pan in the video.
*Using jumbo muffin size pan makes 9 servings.

:: HELPFUL HINTS ::

* Measure the flour and the cocoa powder correctly. Always spoon and level the flour or cocoa powder in the measuring cup.

* Do not overbake the muffins. Overbaking is the most common reason for dry muffins.

* Use a whisk/spatula rather than an electric mixer and stir at every step just until the ingredients are combined. Muffins tend to dry out, sink, or spill over if you overmix them.
