This mini cheesecake recipe is perfectly rich and creamy. It’s loaded with chopped chocolate sandwich cookies. They are very easy to make and require less ingredients. This will likely become one of your new favorite desserts!

You’ll need:
• 21 Oreos/ chocolate sandwich cookies (15pcs. whole + 6pcs. chopped)
• 16oz. Cream Cheese (room temperature)
• ½ cup (100g) white sugar
• 2 large eggs (room temperature)
• ½ tsp vanilla extract
• ½ cup (113g) sour cream

Makes 15 cupcakes

:: HELPFUL HINTS:
* Make sure cream cheese is at room temperature before baking to ensure a smoother batter. One can always soak the package of cream cheese in warm water for 5-15 minutes to bring it to room temperature.

* Avoid cracks and center shrinkage: Use all ingredients at room temperature. Place pan at the middle rack of the oven. Cool completely at room temperature before chilling.

* Best time to serve: Let it cool completely before chilling. It is best to chill them for at least 4 hours or overnight before serving.
