Kalabasa corned beef okoy is a great dish to try! Learn how in this video!

Okoy, sometimes ukoy, is a kind of crispy Pinoy fritter that is made of unshelled small shrimps, glutinous rice batter, and a variety of vegetables, including mung bean sprouts, sweet potato and cassava, green papaya, and thinly sliced carrots and onions. Have you seen this being sold in food stalls in markets or in your favorite snack house? It is commonly colored orange using achuete seeds. You will easily notice them. Okoy can be eaten on their own or with white rice, whether for breakfast, snacks, or as appetizers.

This recipe uses something that is common in Filipino households, that is, squash or kalabasa or corned beef. Small shrimps are replaced with this breakfast staple. Other versions use small fish or calamari instead of shrimps. Curious? Try this recipe now!
