Mini Sandwich Skewers

Ingredients for Potato Mixture:
Potatoes (boiled & mashed) 2 ½ cups
Carrot (shredded) 1/3 cup
Capsicum (chopped) 1/3 cup
Cabbage (chopped) 1/2 cup
Peas (boiled) 1/2 cup
Butter (melted) 2 tbsp
Chili sauce 1 tbsp
Soy sauce 1 tbsp
Mustard paste 1 tbsp
Red chili flakes 1 tsp
White pepper powder 1 tsp
Salt 1 tsp

Ingredients for Mini Sandwich Skewers:
Bread slices as required
Prepared potato mixture as required
Bread crumbs 2 cups
Sesame seeds 1 tbsp
Beaten eggs as required
Wooden skewers as required
Cheddar cheese slices as required

Directions for Potato Mixture Preparation:
1. In a bowl add potatoes, carrot, capsicum, cabbage, peas, chili sauce, soy sauce, butter, mustard paste, red chili flakes, white pepper powder, salt and mix it well. Set aside.
Directions for Mini Sandwich Skewers Preparation:
2. Take the bread slices and remove their edges. Now cut them into 4 equal parts.
3. Take one part and place square shaped potato mixture on it. Place another bread slices on it and then place small square shaped cheddar cheese slices on it.
4. Stack up 2-3 mini sandwiches together. Now secure them with a wooden skewers
5. Dip this sandwich skewer in beaten eggs, then coat in bread crumbs. Dip it in beaten eggs again and then coat in bread crumbs.
6. Deep fry them until crispy and golden brown. Your Mini Sandwich Skewers are ready. Serve and enjoy.

Cooking time: 20-30 mins
