Ingredients:
Muffin Batter
2 pcs egg
80g Canola Oil
2 Ripe Bananas
2g (1 tsp) Cinnamon Powder
200g All-purpose Flour
2g (1/2 tsp) Baking Powder
40g mini–Chocolate Chips
Crunchy Oats
100g Rolled Oats (Raw)
20g Maple Syrup
15g (1 tbsp) Canola Oil
10g All-purpose Flour
Baking conditions: 350degF/ 180 Celsius Middle Rack 25 minutes till Oats turn light golden crunchy

Below is a description of the steps.
Let's start by preparing the mashed bananas. Take two very ripe bananas, peel them, and crush them with the palm of your hand. Then, in a separate bowl, beat two eggs and add 80g of canola oil. Stir to emulsify and then add the mashed bananas.
Now it's time to add the dry ingredients. In a separate bowl, mix 150g of all-purpose flour, 50g of almond flour, 2g of baking powder, and 2g of ground cinnamon (add more if you like). Mix and sieve the dry ingredients until no dry powder is visible. You can use 200g all-purpose flour if you don't have almond flour.
Add the dry ingredients to the wet ingredients and mix until no dry powder is visible. The batter may be runny or thick, so adjust the consistency by adding milk if it's too thick or flour if it's too thin. Once you've achieved the desired consistency, add 40g of mini chocolate chips and mix.
For an extra layer of crunch, we're going to add a quick oatmeal crisp. Mix 100g of oatmeal, 10g of all-purpose flour, and 20g of maple syrup, 15g of canola oil together.
Put the batter in a piping bag and pipe it into muffin cups. Top each muffin with the oatmeal crisp and bake in the oven for ~25 minutes.
